Momma's Famous Cornbread

In my family my cornbread is legendary.  It took many years to perfect and I think it is just right.  You can add a can of corn.  My daughter likes her with chocolate chips.  What ever floats your boat? 

Dry ingredients
2 1/2 cups all purpose flour
2 cups corn meal flour
4 tsp. baking powder
pinch salt
1/2 or 3/4 cups sugar (depends on how sweet you like it)

Wet ingredients:
1 stick melted butter
2 1/4 cups buttermilk or (whole milk with 2 tsp. white vinegar)
* buttermilk adds a nice flavor
3 eggs, room temperature

I a large bowl add all dry ingredients and using a hand whisk, mix all ingredients well.  In another bowl combine all wet ingredients and mix well with whisk.  Add wet ingredients into dry and mix with a wooden spoon.  I use a 10 x12 x 2 disposable aluminum pan.  You can use a 9 x 13 pan.  Spray pan with spray release.  Bake in a 350 degree oven for 30 minutes until golden brown. You might have to bake longer depending on your oven.  Always do the toothpick test.   Serve with creamy butter.
