Momma's Pizzelle

eating Pizzelles.  My mother-in-law does many variations on these cookies.  She often fills them with different kinds of puddings and marmalades.  They are delicious and everyone loves them.  I like them plain or with orange marmalade and a strong cup of espresso.

Recipe:
Heat Pizzelle Iron

3 eggs
1 cup sugar
2 tsp. vanilla extract
1 stick unsalted butter, melted and cooled

2 cups all purpose flour
2 tsp. baking powder
1/2 tsp. anise seeds
pinch salt


In a large bowl whisk eggs with sugar until well blended.  Add vanilla extract and melted butter.  Mix well. Set aside.   In another bowl sift flour and baking powder. Add flour mixture to egg mixture, plus anise seeds and mix well with a wooden spoon.

When Pizzelle Iron is heated in center add 1 Tablespoon of batter to each mold on iron.  Close iron and heat until golden brown.

I fill my with my orange marmalade or Nutella and dust them with powder sugar.
